This low carb chicken enchilada recipe is made with simple ingredients. The enchilada sauce is this recipe is a canned 28 oz enchilada sauce that can be found at almost every grocery store. If you like you can make your own green enchilada sauce but to make this recipe easier I am using the canned sauce.

Here are the simple ingredients you will need for this recipe:

  • 2 Lbs (32oz) Chicken breast
  • 3 Cups Green Enchilada Sauce
  • 1 Medium Red Bell Pepper
  • 1 Medium Red Onion
  • 1 Cup Yellow Corn
  • 2 Chopped Jalapenos
  • 6 Carb Balance Low Carb Tortillas
  • 1 Cup Shredded Mexican Style Four Cheese
  • 1/4 Cup Chopped Fresh Cilantro

How to make this delicious Low Carb Green Chili Chicken Enchilada Meal Prep Casserole

Here is how to make this simple and delicious Low Carb Chicken Enchilada Casserole meal prep recipe. This recipe is made with simple ingredients. This recipe is made with 9 ingredients.

To save time I used an Instant Pot pressure cooker. If you do not have a pressure cooker, you can use a crock-pot slow cooker instead.

Here are the simple instructions for this Enchilada Meal Prep Recipe:

  1. Take out your Instant Pot pressure cooker and add the 2 lbs of chicken breast and 2 cups of green enchilada sauce. After that cover and cook on the chicken setting for 20 minutes.
  2. After 20 minutes shred the chicken with 2 forks. Next add the following ingredients: red bell pepper, red onion, yellow corn, and the chopped jalapeno. Cook for another 10 minutes.
  3. Take out an oven pan and start making 6 enchiladas with the chicken mixture. After that, add 1 cup of enchilada sauce to the top. Finish, by adding 1 cup of shredded cheese to the top.
  4. Preheat your oven to 350F. Bake for 20 minutes. Remove and let it cool down. Cut evenly into 6 pieces. Take out your meal prep containers and transfer them to your containers. Once ready to eat you can add fresh lettuce.

Ingredient Substitution

There are many ways to make this recipe your own, you can use red enchilada sauce instead of the green sauce. You can also make your own enchilada sauce if you like. These are many healthy recipes online to make your own sauce. To make this recipe easier I used canned enchilada sauce.

Tortillas: You can use corn tortillas in this recipe instead of the Low Carb flour tortillas. Most enchilada recipes use corn tortillas but to make it a low-carb option I used low-carb flour tortillas.

Chicken: You can replace the chicken breast with whatever meat you like including beef, pork, and or shrimp. To make them beef use a top round cut of meat and cook for 25 minutes in the Instant Pot pressure cooker.
