  1. Take out your Instant Pot pressure cooker and add the 2 lbs of chicken breast and 2 cups of green enchilada sauce. After that cover and cook on the chicken setting for 20 minutes.
  2. After the 20 minutes shred the chicken with 2 forks. Next add the following ingredients: red bell pepper, red onion, yellow corn, and the chopped jalapeno. Cook for another 10 minutes.
  3. Take out an oven pan and start making 6 enchiladas with the chicken mixture. After that, add 1 cup of enchilada sauce to the top. Finish, by adding 1 cup of shredded cheese to the top.
  4. Preheat your oven to 350F. Bake for 20 minutes. Remove and let it cool down. Cut evenly into 6 pieces. Take out your meal prep containers and transfer them to your containers. Once ready to eat you can add fresh lettuce.
