- 24 oz Raw Shrimp
- 1 can Chipotle Sauce
- 4 cups Spinach
- 1 tsp Minced Garlic
- 1/2 tsp Salt
- 1/2 tsp Black Pepper

This is a quick and easy 25-minute meal prep recipe that you can make for the lunch week. It is made with simple ingredients that will stay fresh for up to four days. This recipe stays fresh because of the pasta. Pasta is a great ingredient for meal prepping.
Here are the simple instructions for this healthy shrimp pasta recipe:
- Take out a large stovetop pan and add water. Bring to a boil and add the 8 oz of pasta. Follow the instructions on the box to cook pasta. Once done set aside.
- Take out a large stovetop pan. Preheat for 2 minutes and spray with non-stick cooking spray. Add the minced garlic and the shrimp to the pan. Once the shrimp are cooked add the salt and black pepper.
- Next, add the cooked pasta and the chipotle sauce to the pan. Mix everything together. After that add the 4 cups of fresh spinach to the pan and cook for 10 minutes.
- Finally, take out four meal prep containers and evenly add the shrimp pasta to each meal prep container. Now it’s time to enjoy!
Ingredients Substitution
Low Carb Option: You can replace the pasta with Low Carb, Gluten Free Shirataki Spaghetti noodles. These noodles are a great option if you are eating keto, or low carb.
Chicken: If you are not a big fan of shrimp you can replace the shrimp with sliced chicken thighs.
Veggies: You can add whatever veggie you like to this recipe. You can also replace the spinach with kale.
