This is a great healthy and delicious meal prep snack that you can pack with some fresh fruit. Add two slices of strawberry banana protein bread to a meal prep container and just add a cup of fresh fruit. This recipe goes well with fresh strawberries.

Yes you can freeze this recipe for up to a month. You can freeze in a glass meal prep container or freezer Ziploc bags. Ever time I make this recipe it only last a few days because it is so good. One day I will get around to freezing a batch.

I would recommend to keep it in a fresh airtight sealed container in the back of the refrigerator and just add fruit when you are ready to eat.

As I write this, it is the month of April and the local strawberry farms are ready for the picking. I happen you use fresh local strawberries in this recipe.

To make healthy Protein Banana Strawberry Bread, you will need:

  • 1/2 cup oat flour
  • 2 scoops of oatmeal protein powder
  • 2 large eggs
  • 4 egg whites
  • 1/2 cup apple sauce
  • 1 tbs baking powder
  • 1 tbsp cinnamon
  • 2 tbsp stevia
  • 1 tbsp vanilla extract
  • 2 ripe bananas
  • 1/2 cup fresh strawberries

One baking bread pan will be needed for this recipe.

Ingredient substitutions for Banana Protein Bread

There are a few ingredients that you can substitute in this recipe that will not change the texture too much. Here are a few alternatives that you can try.

Oat flour: you can replace the oat flour with almond flour is you are looking for a low carb keto friendly alternative. Almond floor in lower in carbohydrates then oat flour.

Stevia: You can substitute the 2 tbsp of stevia with either another natural sweetener like monk fruit or a traditional sweetener like pure honey. Honey will give this recipe a great flavor but will add extra sugar to this recipe.

Strawberry: You can replace the fresh strawberries with any of your favorite berries. You can substitute it with black berries, blue berries or even raspberries.

  2. Mash the bananas and add all the wet ingredients to the bowl. ( eggs, egg whites, apple sauce, vanilla, bananas, and strawberries) Mix all ingredients together with a whisk or fork.
  3. Preheat oven to 350F, After mixing add the mixture into a baking bread pan and bake for 50 minutes at 350F.
  4. Remove from the oven after 50 minutes and let it cool for 10 minutes. Cut into 10 even slices and store them in a meal prep container.

Adding More Protein to This Banana Protein Bread

This recipe has plenty of protein but you can add even more. You can add more protein powder or you can add 2 or 3 more egg whites to this recipe. Almond flour also has more protein in it instead of oat flour.
