Ingredients for Shredded Bbq Chicken Tacos Meal Prep Recipe

This is a high protein BBQ Chicken Taco plate meal prep recipe that is made with simple ingredients. To lower the sugar in this recipe we used G Hughes Sugar-Free BBQ Sauce. This sugar-free BBQ sauce only has 2 carbs per serving and tastes amazing. The hickory flavor is my favorite. If you don’t have this BBQ sauce you can use regular BBQ sauce but just remember that your macros will be higher in this recipe.

  • 1 1/4 Cup Cabbage
  • 1 Cup Purple Cabbage
  • 1 Shredded Carrot
  • 1/2 Cup Light Mayonnaise
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tsp Dijon Mustard

How To Make This Delicious Pressure Cooker Shredded Chicken with Sugar Free Bbq Sauce

Take out your Instant Pot pressure cooker and add 2 lbs of chicken breast into the pot. Next, add the 1 cup of chicken broth to the pot. Cover and cook for 20 minutes on the chicken setting. Release the pressure to remove the chicken breast.

Take out a bowl. Shred the chicken and add it to the bowl. Add the 1/4 cup of BBQ sauce to the bowl and mix together. Set the bowl aside.

Next, it’s time to make the coleslaw. Take out a bowl and add the following ingredients: cabbage, purple cabbage, shredded carrots, light mayo, Dijon mustard, and apple cider vinegar. Mix everything together.

Cook your corn tortillas on a stove top grill and set aside. Now you should have your bowl of BBQ chicken, coleslaw, and your tortillas.

Important: Meal prep tip

To keep this recipe fresh I would recommend that you prep your tacos right before you are ready to eat them. You can reheat your chicken and then make the tacos. You can also eat these tacos cold. My wife loves to eat these tacos cold.

You can make this recipe using a Instant Pot pressure cooker, slow cooker, or a regular stove-top pan. Using a pressure cooker makes this recipe much quicker meal prep but if you have time you can always use a slow cooker.

This is a great tasting meal prep recipe. You can store the BBQ chicken, coleslaw, and the tortillas in different containers and just make your tacos when you are ready to eat. This will keep your meal prep much fresher. You don’t want to eat soggy tortillas.

Top your tacos with your favorite toppings like, fresh chopped jalapenos, or sriracha hot sauce.

Ingredient substitution

Meat: You can substitute the chicken with either beef or pork. Just use a lean cut of meat that does not have a lot of fat. You can use a top round cut.

Tortillas: You can use either a low-carb tortilla or flour tortilla instead of the corn tortillas.

Mayonnaise: If you are not a fan of mayonnaise you can use a low-fat Greek yogurt.
