These healthy lemon yogurt blueberry muffins are only around 120 calories per muffin, 3 grams of fat, 18 grams of carbohydrate, and 9 grams of protein. Did I mention, these muffins taste amazing! The blueberries give it great texture.

This recipe make 12 delicious lemon yogurt blueberry muffins. Keep them in a large meal prep container and have them every time you have a sweet tooth or just add one to your lunch bag as a meal prep snack.

The protein I used in this recipe is from bodybuilding.com and is the Oatmeal cookie protein flavor. If you do not have this oatmeal flavor you can use your favorite vanilla flavor protein powder.

- 3 Cups Rolled Oats
- 1 Tbsp Baking Powder
- 1/2 Tsp Salt
- 2 Tbsp Stevia
- 2 Large Eggs
- 2 Scoops Oatmeal Protein Powder or Vanilla protein powder
- 1 Serving Lite and Fit Greek Yogurt Vanilla
- 1 Tbsp Lemon Zest
- 4 Tbsp Lemon Juice
- 1 Cup Blueberries
- 1 Cup Unsweetened Almond Milk

- In a large bowl add the following dry ingredients: oats, baking soda, salt, protein powder, and stevia. Next, add the wet ingredients: almond milk, eggs, yogurt, lemon zest, and lemon juice.
- Mix all ingredients together, and then add the blueberries. Preheat your oven to 325F. Take out your muffin pan and spray with non-stick cooking spray. Add your mixture to the muffin pan. You should be able to make a total of 12 muffins.
- Bake your muffins at 325F for 40 minutes. After 40 minutes check your muffins and let them rest for 5 minutes. Add them to a meal prep container and enjoy it!
