Easy Chicken Meal Prep for the week
This recipe is easy to make and tastes amazing for lunch meal prep. Using the chicken thighs instead of using boneless chicken breast gives it a much juicier texture and flavor. I prefer to use chipotle sauce instead of using chipotle peppers in adobe sauce. By adding the chipotle sauce, gives the chicken a great taste without making it too spicy. Each bowl gets around 6 oz of chicken.

Cilantro White Rice
The cilantro white rice in this recipe is easy to make and tastes great. Once the white rice is cooked all you have to do is add 1/3 cup of chopped cilantro and lime juice. Mix all the ingredients together and there you have Chipotle-style cilantro white rice.
The bell peppers in this chicken bowl give this recipe extra flavor. Cooked just enough to have a crunch when you bit into them.

- 30 oz Boneless Chicken Thighs
- 3/4 Cup White Rice
- 7 oz Chipotle Sauce
- 1 Tsp Minced Garlic
- 1 Tbsp Chile Powder
- 1/3 Cup Cilantro
- 3 Large Mixed Bell Peppers
- 1 Can Kidney Beans
- 1 Can Yellow Corn

- In a mixing add the chicken, garlic, chili powder, and chipotle sauce and mix together. Marinate for 30 minutes.
- In a bowl cook the white rice. Bring to a boil and let it sit for 15 minutes. Add the chopped cilantro and lime juice. Mix the ingredients together.
- In a large pan add the bell peppers and onion and cook for 20 minutes.
- After 30 minutes, cook the chicken on either a bbq grill, griddle, or a cast iron pan. Cook at 400 F for 12 minutes on each side. Once cooked remove.
- Take out your 5 meal prep containers and add the chicken, bell peppers, corn, rice, and beans.
- There you have it. 5 servings of chipotle chicken bowl recipe.
