I cannot take the credit for this recipe. This rice pudding recipe was created by Laura AKA Mrs. The Meal Prep Ninja. My wife Laura loves to meal prep healthy snack for us and the kids. This is another recipe that will crave your sweet tooth without adding all the extra calories.

How To Make Healthy Rice Pudding in the Instant Pot?

This recipe was made in the instant pot pressure cooker but can also be made in a regular pot if you don’t have one. We prefer the pressure cooker (Instant Pot) over a regular pot because it cooks much faster. If you are looking into pressure cooking here is a link to one on Amazon.

Healthy Protein Rice Pudding Recipe
Healthy and delicious protein rice pudding recipe that is a great healthy snack. This is a delicious healthy rice pudding recipe that you will love as a snack or dessert. Instructions
  1. In your Instant pot or large pot add the following ingredients: almond milk, water, rice, vanilla, cinnamon. Cover and cook for 20 minutes.
  2. After 20 minutes release the pressure and open Instant pot.
  3. In a protein shaker bottle mix the vanilla protein powder and 4 oz of almond milk. Shake until mixed and add to the Instant Pot. Next, add the coconut milk and the stevia to the pot.
  4. Lastly, mix all the ingredients together and add the protein rice pudding to your meal prep containers.
  5. There you have it!
