This recipe is easy to make and only takes around 25 minutes to cook. This super easy to make ground chicken burrito bowl is made with simple ingredients. All of the ingredients can be found at your local grocery store, including the canned Salsa Verde sauce. The Salsa Verde sauce gives it just enough kick. This recipe is not very spicy.

  • 20 oz ground chicken breast
  • 2 Tbsp taco seasoning (homemade taco seasoning)
  • 2 sliced bell peppers
  • 1 sliced onion
  • 1 sliced zucchini
  • 1 can black beans
  • 1 can yellow corn
  • 1 7-oz can Salsa Verde
  • 1 bag Uncle Ben’s whole grain brown rice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup of shredded cheese

This is a quick and easy 25 minute meal prep recipe that you can make for the week. It is made with simple ingredients that will stay fresh for days. You will not have to worry about eating dried up meals. This ground chicken burrito bowl meal prep recipe is packed with flavor.

Here are the simple instructions for this Ground Chicken Burrito Bowl recipe:

  1. Start by slicing all of your vegetables for this recipe, Next, take out your stove-top pan and reheat it for 3 minutes. Spray non-stick cooking spray and add your ground chicken. Cook until brown.
  2. Add 2 Tbsp of taco seasoning to the chicken. Here is a link to how to make your own taco seasoning. Next, add the bell peppers, onion, and zucchini’s to the pan and cook for 10 minutes.
  3. After 10 minutes, add the black beans, yellow corn, Uncle Ben’s brown rice, and the salsa verde. Mix everything together and cook on low for 5 minutes. Next, add 1/4 cup of fresh cilantro to the pan and mix everything together.
  4. Take out your meal prep containers and evenly transfer the recipe to 5 meal prep containers. Add shredded cheese to the top of each bowl and some fresh cilantro. And there you have it!

Ingredient Substitution

There are a few ingredients that you can substitute in this recipe to make it your own. Depending on you nutrition needs you can make this a low carbohydrate recipe by replace the rice with cauliflower rice.

Rice: If you are looking for a low carb option, you can replace the Uncle Ben’s brown rice with cauliflower rice instead. You can also use regular brown rice instead for a healthier choice.

Vegetables: You can replace any of the vegetables with your favorite veggies. If you are looking to add more veggies to your diet just add more bell peppers and onion to this recipe.

Ground Chicken: I love ground chicken instead of ground turkey but if you don’t have ground chicken or refer ground turkey then use ground turkey. I buy the ground chicken at the meat container at my local grocery store.
