- Cook the sweet potato in the microwave for 6 minutes. This will soften up the potato so that you don’t have to cook it longer in the skillet.
- Next, add the bell pepper, mushrooms, and onion to the pan. Cook for ten minutes. After ten minutes, add the corn, and the spicy tomato sauce. Mix everything together and cook for another 5 to 10 minutes.
- Take out 5 meal prep containers and evenly transfer the recipe to your bowls.
