- 1 cup (120g) Protein Pancake mix I am using the Krusteaz brand
- 2 whole Eggs
- 2 whole Egg whites
- 1 cup Blueberries fresh or frozen
- 1 1/2 Tsp Cinnamon
- 1 1/2 Tsp Vanilla Extract
- 1 cup water

- 1 2 Tbsp Reddi Wip
- 1 1/2 cup Blueberries

Instructions
- In a large bowl crack 2 eggs and only place the egg whites into the bowl.
- Next, crack 2 more whole eggs into the same bowl.
- Grab a whisk and mix all the eggs in the bowl.
- Next, add 1 cup of the protein pancake mix into the bowl.
- Also, add 1/2 Tsp of ground cinnamon and 1/2 Tsp vanilla extract into the bowl.
- Add 1 cup of water to the bowl and mix all ingredients together. You may need to add extra mix or water to get the correct consistency.
- Preheat a pan or a pancake griddle to medium heat.
- Add protein pancake mix to the pan and add the blueberries to the pancakes.
- Flip after a few minutes and repeat the process on all pancakes.
- Lastly, top the pancakes with fat-free cool whip
