I cannot take the credit for this recipe. This Banana protein bread recipe was created by Laura AKA Mrs. The Meal Prep Ninja. My wife Laura loves to meal prep as much as I do. She loves to pack healthy snacks in her lunch bag. She loves to make kid-friendly healthy snacks that she can also pack in the kid’s lunch bag. This recipe got two thumbs up from our kids.
She used honey in this recipe to give it a sweet taste without having to add pure sugar. This bread is moist and full of flavor. I would really recommend this recipe for anyone who is looking to cure their sweet tooth without feeling guilty.
The chocolate chips are optional if you don’t want to add any extra sugar but they do give this recipe that extra chocolate taste.
We normally keep them in a plastic container and stay fresh for up to 5 days. We normally eat them before the fifth day.

- 2 Medium Bananas
- 2 Large Eggs
- 4 liquid 100% Liquid Egg Whites
- 4 Tbsp Pure Honey
- 1/2 Cup Oat Flour
- 1/2 Cup Unsweetened Apple Sauce
- 2 Scoops Strawberry Protein Powder
- 1 Tsp Vanilla Extract
- 1 Tbsp Cinnamon
- 1 Tsp Baking Powder

- In a large bowl add the following ingredients: banana, eggs, egg whites, honey oat flour, apple sauce, protein powder, vanilla, cinnamon, and baking powder and mix ingredients together with a hand mixer.
- Coat your bread pan with non-stick cooking stay and add flour to the pan. mix the flour around so that the bread does not stick.
- Add banana protein bread mixture to the bread pan.
- Preheat oven to 350F and place the bread pan into the oven for 1 hour or until it is cooked evenly.
- Take out of the oven and let it sit for 10 minutes. Cut into 9 or 10 slices and place it into your meal prep container. There you have it!
