Pull out one pound of chicken breast from the refrigerator or freezer and cook it up with some splices and veggies and you are almost done. That is it, just that simple. All of these ingredients are basic ingredients that you already have or are available at almost every store.

  • Chop up chicken breast into small cubes
  • Chop up all veggies
  • Open your canned ingredients
  • Take out your spices

How to Make Fiesta Chicken Meal Prep Bowl?

All you have to do is takes out all the ingredients that you will need for this recipe and prep heat your cooking pan and add some spices and salsa and there you have.

Here’s how you really make a fiesta chicken bowl recipe

  1. Chop up chicken breast and veggies
  2. Cook 1 cup of white rice to make 2 cups of white rice
  3. Heat a large cooking pan to medium heat.
  4. Add the olive oil to the pan and add the chicken.
  5. Cook for 5 minutes and add chili powder and red onion. Next, add the veggies and saute for another 5 minutes.
  6. Add the cooked white rice, salsa, cilantro, and squeeze 1/2 of a lime juice
  7. Add optional toppings.

Chicken Fiesta Meal Prep Recipe Substitutions

Chicken: I used boneless skinless chicken breast in this recipe but you can easily use ground chicken or my favorite boneless chicken thighs. You can even use ground turkey if you like.

Rice: Instead of white rice, feel free to use brown rice or even Spanish rice. In this recipe, I cooked the rice in water but you can even cook it with bone broth chicken to give it extra flavor and protein. If you are looking for a low carb option you can use cauliflower rice instead.

Veggies: I can’t lie I love my cooked onion and bell peppers but I know not everyone feels the same. You can literally use just about any vegetable you like for the fiesta chicken bowl recipe. I like to use fresh veggies but you can even use frozen if you like.

Is this meal prep chicken bowl recipe spicy?

In this recipe, I used a 7 oz can of Salsa Verde. It is not that spicy and it gives this recipe a great flavor. If you have the time you can make your own salsa. Fresh salsas are always a better choice but because of time, we are using the canned salsa.

If you are not a fan of salsa verde you can also use chunky Pace salsa. It will also give it great flavor.

25-minute Meal Prep Recipe

This is a great recipe when you don’t have that much time to meal prep. It only takes 25 minutes to make, so you should not have any excuses as to why you can’t meal prep lol. The best part of this chicken bowl meal prep recipe is that it tastes delicious!

Freezing this recipe

Yes, you can freeze this recipe if you like. You can keep this recipe in the freezer for up to 2 to 3 months. I like to only make the 4 servings so that I don’t have to freeze this recipe. Normally I don’t like to freeze meal prep recipes with rice because that rice gets hard but because the rice is mixed with the other ingredients the rice does not get hard.

There are several different ways to reheating your meal prep chicken recipe. Here are my tips for reheating this delicious recipe.

  • If you are going to reheat in a skillet add some lime juice to the skillet before adding the chicken bowl
  • If you are going to reheat in the microwave, just reheat for 2-3 minutes and add your topping after
  • After reheating make sure to add some salsa or lime juice to your bowl for extra flavor and moisture

Don’t Forget the Avocado!

If you love avocado as I do, you will enjoy adding avocado to this recipe! I only add avocado when its time to dig into this delicious recipe. Once reheated I like to mix all the ingredients together to get the full flavor.
