What are Ceramic Knives Made of?

The blade of a ceramic knife is made from zirconium dioxide, which is also called zirconia. To produce the blade, the powdered zirconia must be dry-pressed and fired through solid-state sintering. On the Mohs Scale of mineral hardness, the produced blade is 8.5. The hardened steel is between 7.5 and 8, while normal steel is 4.5. What does it mean?

In the Mohs Scale, the bigger the number the harder the material being tested. Obviously, the finished blade of a ceramic knife is harder than steel. The ceramic blade has a hard edge that can stay sharp for a longer period as compared to the blade of a conventional steel knife. However, the ceramic blade is brittle and not as tough as the steel knife.

Take note that the ceramic used to produce the ceramic knives is not the same as the one used in making a ceramic bowl. Diamonds are harder than the ceramic blade and only diamonds can sharpen the edge of a ceramic blade.

To stabilize the zirconia, yttrium oxide is added to it while the blade is in the cooling process. The resulting product is known as Transformation Toughened Zirconia (TTZ). To sharpen the blade, the grinding wheel that will be used for the process is coated with diamond dust.

Are Ceramic Knives Better the Traditional Steel Knives?

Ceramic knives are popular because they are very sharp, lightweight, and affordable. A ceramic knife is also considerably harder than a steel knife. It does not conduct electricity while you use it in the kitchen, non-magnetic, and it will not suffer from corrosion in harsh environments.

The ceramic blade has the capacity to resist caustic substances and strong acid ā€“ something that the steel blade wonā€™t be able to accomplish. It can also retain its sharpness far longer than a steel blade. The traditional steel knife needs regular re-shaping and honing to maintain a sharp edge. Some tests show that ceramic knives can retain their sharpness up to ten times longer than steel knives.

Are Ceramic Knives Safe?

Ceramic knives are relatively safe to use, but you need to be careful of the sharp edge. All knives can cut, even the blunt ones. You always need to be careful when handling a knife.

However, the improved methods of manufacturing the ceramic blades have improved greatly and reduced the risk of breakage.

You cannot use the ceramic knives in slicing frozen foods or chopping through meat with bones. It is also not suitable for crushing garlic or any other application that requires exerting great force. Such action may lead to chipping or even breaking of the blade.

Because ceramic is brittle, expect the products made from such material to be the same. The ceramic knives may break when you twist or flex them. The ceramic blade may break when dropped. You cannot put the ceramic knives in a dishwasher because the blades may get chipped. You cannot store them in a drawer.

When the edge of the ceramic blade becomes blunt, you cannot simply sharpen it using your ordinary knife sharpener. Remember that it is harder than steel and the only thing that can sharpen it is diamond. You need to take it to someone who can sharpen it for you or let the manufacturer handle it.

Taking the knife to the manufacturer or to someone who can sharpen it for you will still eat some of the time that you can spend on something worthwhile. It is still better if you can have a way to sharpen the knife in your own home. You also need to know the angle that you need to follow when you sharpen the knife ā€“ this one is quite difficult to get it right the first time.

As stated earlier, you cannot use ceramic knives for all types of cutting. The blade is brittle and will break or chip easily when you use it to cut through meat bone, frozen food, and other items with the same hardness.

A ceramic knife cannot replace a chefā€™s knife ā€“ that is for certain. However, you can cut your fruits (avoid the hard seeds) and vegetables faster when you are using ceramic knives. Handle them with care to make them work for you for a long time.

The ceramic knife may not be for everyone, but no one can deny the advantages and benefits of using this type of knife. It is still a nice addition to your kitchen tools that you can depend on.
