Quick and easy air fryer recipe

Protein Powder Muffins

This recipe is a great snack that is packed with great taste and is macro-friendly. 2 large muffins is one serving, packed with 20.8 grams of protein per serving. The best part is that I can meal prep them and have as a snack. Once you taste this recipe you will not believe that there are only 295 calories per 2 muffins.

The Chocolate protein powder gives these muffins a great chocolatey flavor. You can eat them cold or you can put them in the microwave for 30 seconds before eating to warm them back you.

You can even have these Banana Chocolate Protein Muffins for breakfast. A cup of coffee and Protein muffins. What a way to start the day. I like to have mine as a snack before lunch or a pre or post-workout snack

This recipe is very simple and can be made in just a few minutes. All of the ingredients are ingredients that you most likely already have in your pantry or refrigerator.

Who knew that these air fryers were amazing. I have to say that I originally thought that these air fryers were just another unnecessary kitchen accessory. But I was wrong, these things work amazing for cooking and baking. Quick and easy to use. I have the Insignia – 5L Analog Air Fryer – Black.

Instructions
  1. In a large bowl add the dry ingredients: 2 cups of quick oats, 1 medium banana, 2 scoops of chocolate protein powder, 2 tsp of baking powder, 1 tbsp ground cinnamon, and 1/2 tsp of salt. Mix dry ingredients together
  2. Next, you are going to get a smaller bowl and add 1 medium banana. Go ahead and smash the banana. Add 2 eggs to the bowl. Add 1/2 cup of unsweetened apple sauce to the bowl. In a protein shaker bottle add 1 cup of almond milk and add the 2 scoops of protein and shake. Add the mixture to the bowl and mix all the ingredients together
  3. Add the wet ingredients to the large bowl with the dry ingredients. Mix all ingredients together.
  4. Take out a muffin pan and coat with a nonstick cooking spray or add a cupcake liner. Add 1/2 cup of the mixture to each muffin cup tray. I was able to make 8 muffins in total.
  5. I am using an Air Fryer for this recipe but you can also use a conventional oven. I put mine in the air fryer for 15 minutes at 375F. Take the muffins out once they are crisp.
  6. This is optional but you can add chocolate chips to the top of the muffins before putting them in the air fryer or oven.
  7. Take them out a let them sit for a few minutes. You can store them in a meal prep container for up to 3 to 4 days or freeze them.
