Protein Chocolate Chip Cookies Healthy Meal Prep Snack
These are the absolute best protein chocolate chip cookies with coconut flakes. Simple and healthy ingredients like oat flour, Greek yogurt, eggs, and sugar-free chocolate chips. 5 minutes to prep and 12 minutes in the oven. These delicious cookies will be ready in no time.

When it comes to healthy snacks this recipe is one of my go to protein cookie recipes. These are not your small cookies loaded with tons of calories. These are large cookies that are easy to make and don’t take much time. I cant take much credit for this recipe because my wife Mrs. The Meal Prep Ninja came up with this recipe.
The goal was to make a protein cookie that is macro-friendly, a good portion size, and that tastes delicious! check, check and check!
Ingredients in Best Protein Cookies
These protein cookies are made with simple ingredients that most people already have in their kitchen. If you don’t have oat flour, all you have to do in blend oatmeal in the blender to make oat flour. We blended oatmeal to make the oat flour used in this recipe.
You will need:
- 2 cups oat flour
- 2 scoops oatmeal protein powder (you can use vanilla)
- 1/2 cup apple sauce
- 1 tsp olive oil
- 2 whole eggs
- 1 tbsp cinnamon
- 1 tbsp stevia
- 1 serving lite greek yogurt
- 1 tsp baking powder
- 1/2 cup coconut flakes
- 2 tbsp sugar-free chocolate chips
The coconut flakes give this recipe a great taste!

How to make Protein Chocolate Chip Cookies
This recipe is very easy to make all you need is the ingredients a large bowl, a sheet pan and a oven of curse. Here are the step by step instructions:
- In a large mixing, add and mix all of the ingredients together. No need to get any fancy tools. A simple fork and some elbow grease will do the job. Once mixed take out a baking sheet.
- Take out a large spoon and make 12 large cookies on your sheet pan. Preheat your oven to 350F.
- Bake for around 12 minutes. Don’t over bake them or you will end up with hard and dry cookies.
- Allow them to cool on the tray for 3-5 minutes. Once cool you can transfer them to a meal prep container.
Pack them in your meal prep container and have one or two as a snack or a breakfast replacement with a cup of coffee.
Benefits of Healthy Meal Prep Snacks
There are plenty of great reasons to transition to a healthy cookie option. Most regular cookie bot at the store or full of saturated fat and sugar.
- There is no added sugar to this recipe. This recipe has been sweetened with 1 tbsp Stevia, coconut flakes, and sugar-free chocolate chips
- Oat flour instead of the regular flour. Oat flour is a much healthier choice than the regular floor.
- This recipe is macro-friendly and has plenty of protein. Most chocolate chip cookies don’t have much protein in the recipe.
- Healthy fats from the coconut flakes.

There are many other ingredients you can add to this recipe if you like. Make them your own. Add some of your favorite ingredients.
Here are some ideas: dried fruit, white chocolate, chia seeds, and or peanut butter chips.
Ingredient Substitutions
If you prefer, you can substitute any of the ingredients with other ingredients or if you are missing a ingredient.
Low Carb Option
If you are looking for a low carb option you can replace the oat flour with either almond flour or any coconut flour that you like. This will increase the the total fat in the recipe but will lower the carbohydrates in the recipe
Protein Powder: If you do not have oatmeal protein powder you can use a vanilla flavor flavor protein powder. If you don’t have any protein powder you can leave it out but the protein in this recipe will be lower.
Greek Yogurt: If you do not have flavored vanilla lite Greek yogurt you can use plan Greek yogurt.
Sweetener: If you are looking for other natural sweetener options you can use Monk Fruit Sweetener. If you want to use a traditional sweetener you can use pure honey. Pure honey will increase the total sugar in this recipe.
Storing Best Protein Chocolate Chip Cookies
Once the cookies cool you can place them in a large meal prep container and store them when you are ready to eat or take them with you on the go. Normally I place a paper tail on the bottom of the meal prep container before adding the protein chocolate chip cookies.
Freezing Protein Cookies
You can freeze these protein cookie but I don’t think you will eat them before ever thinking of putting them in the freezer. These cookies can last up to 5 days in the refrigerator before they start getting hard.
To freeze place them in a sealed container and keep for up to a month in the freezer. Just label the container or bag so that you know when they were placed in the freezer.
