  1. Place 1 1/2 Lbs (24oz) of chicken breast and 1 large can (29oz) of red enchilada sauce into a large Slow Cooker bowl. Cook on high for 3 1/2 hours.
  2. After 3 1/2 hours shred the chicken and add the following ingredients: bell peppers, zucchinis, onion, and jalapeno. Cook for 1 hour on high.
  3. After an hour add the corn tortillas and mix it in with the chicken. Add the cheese, diced tomatoes, and the black olives on top. Cook for 1 more hour.
  4. After an hour your slow cooker chicken enchiladas are ready to be transferred over to your meal prep containers. I make six servings.
