  1. Start by chopping all of the vegetables for this recipe. Next, preheat your stove-top pan to medium heat and add the 1 Tbsp of olive oil.
  2. Next, add the 1 tbsp of minced garlic and the raw shrimp. After cooking the shrimp for a few minutes, add the following ingredients: lime juice, red onion, bell peppers, zucchini, and jalapeno. Cover the pan and cook for 10 to 15 minutes.
  3. After 15 minutes, add the following ingredients: yellow corn, kidney beans, fresh cilantro, and chipotle sauce to the pan. Mix everything together and cook for another 5 minutes.
  4. Take out 4 meal prep containers and divide evenly. There you have it. 4 healthy shrimp meal prep bowls.
