  1. Take out a large bowl and add the following ingredients: oat flour, eggs, cottage cheese, pumpkin puree, protein powder, baking powder, cinnamon, pumpkin pie spice, and a pinch of salt.
  2. Next, take out a large stovetop pan and preheat for 2 minutes. Spray pan with non-stick cooking spray and add the pumpkin pancake mix to the pan. Cook each side for 2 to 3 minutes.
  3. After, 2 to 3 minutes flip the pancake and cook for another 2 to 3 minutes. Once cooked remove the pancake and repeat the process.
  4. This recipe makes around 5 protein pancakes. After cooking all the pancake mix. You should have around 5 pancakes. Now you can top your pancakes with your favorite toppings.
